Keftedes

Keftedes ~ Greek Cypriot Meatballs

Keftedes are served as a main course in Cyprus and Greece with salad, chips and rice or for parties and with the traditional meze.

When used for parties or meze they are called Keftedakia (the ‘akia’ means small).

There are many variations of these mouthwatering meatballs. Some are cooked using breadcrumbs, some with grated potatoes (some use instant potatoes!) and others use a mixture of both.

For this recipe we are using grated potatoes but you can use whatever you prefer.

Keftedes Recipe

Ingredients

For the meat you can use lamb or pork or a mixture of both. Vegetarians can substitute the meat for a large bag of Quorn.

  • 1lb of minced pork/minced lamb
  • 2 large potatoes
  • 1 egg
  • 2 cloves garlic
  • 1 large onion
  • 1 tablespoons parsley finely chopped
  • 1 tablespoon dried mint
  • 1 teaspoon oregano or ground cumin
  • salt and pepper
  • 1 tablespoon olive oil
  • Vegetable or Sunflower oil for deep frying
  • flour for coating

Preparation

  • Grate onion and garlic into a large bowl and then add meat (or quorn), parsley, mint, oregano, cinnamon, egg, olive oil, salt and pepper and mix well.
  • Grate potato and squeeze out excess liquid then add to mixture and mix.
  • Wet hands and take walnut size portions of the mixture and form into oval shapes (for large meatballs) and flatten slightly. For the small meatballs shape them into small balls.
  • Heat oil in large frying pan, add meatballs and cook for approximately 6 – 8 turning once (cook in small batches).
  • Remove meatballs from oil using slotted spatular and keep warm.
Serve with salad, chips or rice (or both), tzanziki (or yoghurt) and quarters of fresh lemon.

Tip! – Delicious also served with fasolia yiahni

Enjoy!

St Georges Paphos

St Georges Paphos (Ayios Georgios)

island of geronisos st georges paphos

The small fishing village of St Georges Paphos (Ayios Georgios) is just a short distance from the village of Peyia.  Of archaeological interest are the nearby remains of an ancient Basilica with floor mosaics still visible.

Just before you reach Ayios Georgios(facing the unusual Island of Geronisos), is the residential area of Sea Caves where there are many natural caves (hence the name).

The church of Agios Georgios overlooks the beach where you can enjoy snorkeling and scuba-diving.

St George's Fish Restaurant St Georges fish restaurant offers fresh barbuni (red mullet), calamari and various other fish and meat dishes all served with delicious chips and the freshest of salads. The restaurant gets very busy on Sundays and there is a lovely terrace where you can dine under the vines, overlooking the sparkling blue Mediterranean sea.

A few minutes drive from here is the lovely resort of Coral Bay and a little further north is the stunning nature reserve of the Akamas Peninsula.

Lemesos Carnival

Lemesos Carnival 2017

(Limassol Carnival)

16 – 26  February 2017

limassol_carnival_2017Lemesos Carnival is always held 50 days before Greek Easter. This year the festivities officially begin on Shrove Thursday (19 February) when the Queen of the Carnival, “The Deep Blue of the Mediterranean” will enter the town and culminate with the Grand Parade on Sunday,  26 February.

Carnival time is celebrated throughout the island, with parades and floats,  Limassol is known for having the  largest and most exciting festival of all.

As with all carnivals, the focus is on fun and eating  food.  The festival celebrates the end of winter and the beginning  of Spring.   It’s also a time of fasting.

In French ‘carnival’ means the end of the meat-eating period. For Greeks it’s referred to as Apokria, the fasting period before Easter.  Mediterranean countries such as France, Spain, Greece and Cyprus celebrate this annual carnival.

Highlights of Lemesos Carnival include …

  • Entrance of King Carnival
  • Children’s Carnival Parade
  • Serenaders’ Parade
  • Grand Carnival Parade of chariots and groups

Lemesos Carnival ~ Meat & Cheese Weeks

  • First week is meat week (Kreatini) when Orthodox Christians stop eating meat.
  • Second week is cheese week (Tyrini) and carnival festivities begin on Thursday of the Meat Week.

Many hours are spent preparing costumes for this great event. The celebrations start on Shrove Thursday when the King Carnival enters town. This is followed on the Sunday by the children’s parade and various Serenaders Shows.

These take place throughout the week in hotels. The last day of carnival is celebrated along Makarios Avenue on the last Sunday of the Carnival with 50 floats and dancers in the Grand Carnival Parade.

Kolossi Castle
Kolossi Village, 14km west of Lemesos – Tel: 2593 4907
Open: June-Aug 9am-7.30am/Sep-May 9am-6pm daily

The castle is one of the most popular attractions in Limassol and very easy to reach either by bus (takes about 30 mins) or by car in about 10 minutes.

The castle is situated in Kolossi Village which is surrounded by carob and olive trees and vineyards. Just a short drive away is the beautiful Kourion Beach and the 2000 year old amphitheatre and ruins at Kourion.

Nearby is the village of Erimi where you can sample some of the delicious wines produced in the region at the Erimi Wine Museum.

The 13th century castle is very impressive but the narrow spiral staircase leading to the top is quite scary especially if you don’t like heights.

Once you get to the top you can see the old remains of a 14th century sugar factory and the rich fertile land where the Knights of St John grew grapes.

The grapes were used to produce the sweet desert wine Commandaria which is one of the oldest wines in the world and often used for weddings and special occasions.

Tyropita Recipe

Cheese Pies

Tyropita These tasty bites of food are very popular in both Greece and Cyprus and are very easy to make.

Tyropita (τυρóπιτα) can be bought in bakeries all over Cyprus and are sold in bite size or large pies.

Many are made with filo pastry but you can also use puff pastry. These are great for parties and picnics.

Snacks like these are also sold by street vendors in Athens and Cyprus alongside Koulouria (sesame bread rings) which are both excellent for breakfast or a mid morning snack.

Easy Tyropita Recipe with Puff Pastry

The quickest way to make these tasty delights is to buy frozen puff pastry made with butter. They are very easy and quick to make – I made the pies in the photo in 30mins.

For the mixture use one beaten egg, one packet of feta cheese and a tablespoon of dried mint.

When making cheese pies with filo pastry you can use either butter or the traditional olive oil which will make the pastry more crispy.

INGREDIENTS

  • 1 packet frozen puff pastry
