Galombrama Recipe ~ (Semolina Cake)
Galombrama translates to ‘Good Thing’ which it really is, it’s also very easy to make.
There are a variety of ways to make this cake so you can add or take things away as you prefer.
If you make too much syrup just pop the left overs into the fridge and keep it for the next cake you make.
Galombrama Recipe
Add the following to a pan…
2 cups of water
2 cups of sugar
cinammon sticks
8 drops of lemon juice (or add to taste)
Ingredients for Galombrama
4 eggs
1 cup of olive oil / sunflower oil or butter
1 orange
2 or 3 tears of mastica / mastiha (if you like)
2 tspns baking powder
500 gms semolina
Almonds for decoration (halved and skinned)
Preparation
- Lighty oil a large dish and then grind mastica with a little sugar until a powder.
- Separate the eggs and mix yolks.
- Add warmed butter or olive oil to eggs then slowly add the semolina, mastica and baking powder.
- Mix egg whites, then slowly fold into the egg and oil/butter mixture.
- Pour into dish and cook for 45mins on 180c
- Take out of the oven and pour the cooled syrup over the hot cake and leave to rest.
I think the cake tastes better when cooled down, and it’s even better the next day or the day after. Enjoy!
